           Cold Cucumber Soup              

   2 cucumbers, 2 cups yogurt, 1/2 cup cold water, 1 clove garlic(mashed),1/4 tsp. salt, 1 Tbl. dried mint

 

     1. Wash and peel cucumbers. Cut into quarters lengthwise, then into thin slices.

     2. Mix together yogurt and water in a bowl until smooth. Add the cucumbers, garlic, salt and mint. Put some ice cubes in the bowl and refrigerate for a couple of hours.

     3. Stir well just before serving and remove the ice cubes.

     Note: For an alternative you may add canned chick peas (rinsed), cold cooked pearl barley or both for a great vegitarian dish.

     My Grandmother used to make this on those hot steamy summer nights and it would cool your body right down. Enjoy !
